The Bar at Mileta

Our bar program is led by a small, collaborative team of bartenders who are constantly experimenting, refining, and pushing ideas forward. From unexpected techniques like mushroom fat-washed bourbon to thoughtful riffs on familiar classics, the goal is always the same: cocktails that are inventive, balanced, and easy to enjoy.

Sitting at the bar offers a slightly different rhythm than the dining room—more conversational, a little more spontaneous, and often where new ideas first make their way into a glass. You’ll also find a few bar-only offerings here, including our well-known Mileta burger.

There’s almost always something new in the works, so if you find yourself at the bar, don’t hesitate to ask what we’re playing with—we are always excited to offer something off menu.

Ingredients We are Playing With

Things are always changing at The Bar at Mileta, guided by what’s in season and what’s tasting best right now. This spring, we’re working with hibiscus across a range of cocktails—leaning into its floral tartness alongside spirits and bright citrus. We’re also exploring a snap pea and green apple cordial, bringing a crisp sweet-sour note that plays well with everything from lighter aperitifs to more spirit-forward builds.

With the 2026 Keeneland Spring Meet in full swing, we’re offering a selection of Keeneland-inspired cocktails, including a strawberry basil Boulevardier, a modern take on a Pimm’s Cup, and a boozy Coca-Cola with lime.
