The Bar at Mileta
Our bar program is led by a small, collaborative team of bartenders who are constantly experimenting, refining, and pushing ideas forward. From unexpected techniques like mushroom fat-washed bourbon to thoughtful riffs on familiar classics, the goal is always the same: cocktails that are inventive, balanced, and easy to enjoy.
Sitting at the bar offers a slightly different rhythm than the dining room—more conversational, a little more spontaneous, and often where new ideas first make their way into a glass. You’ll also find a few bar-only offerings here, including our well-known Mileta burger.
There’s almost always something new in the works, so if you find yourself at the bar, don’t hesitate to ask what we’re playing with—we are always excited to offer something off menu.
Ingredients We are Playing With
Summer has arrived behind the bar, and with it comes a wave of new cocktails inspired by tropical flavors, tiki traditions, and whatever else happens to capture our attention. While many of these drinks lean bright, refreshing, and beachy, they're still unmistakably Mileta. Thoughtful, ingredient-driven, and unconcerned with doing things the conventional way. As always, we're working with fresh ingredients, house-made components, and plenty of creativity.
Summer Cocktails
Nude Beach
A tropical escape in a glass. Rum, coconut, pineapple, lime, tiki bitters, and cinnamon come together in a cocktail that feels tailor-made for a summer evening.
Leading Lady
A savory and vibrant tequila cocktail featuring tomatillo, poblano liqueur, and lime. Fresh, vegetal, and unlike anything else on the menu.
Melonious Thunk
Strawberry and tarragon-infused vodka meets watermelon cordial and bergamot liqueur for a cocktail that's juicy, aromatic, and surprisingly complex.
