We opened our doors in Lexington with a simple intention: to create something that feels both elevated and deeply personal.
Located in Lexington, Mileta brings together seasonal cooking, housemade pasta, craft cocktails, and a dining room designed for gathering. Our menu is shaped by the ingredients around us, the farmers we work with, and the belief that every detail matters, from what’s on the plate to how a guest feels when they walk through the door.
Built from the ground up by Dallas Rose and Alex Green, Mileta has always been a hands-on project. Every decision, from the design of the space to the details of the menu, reflects a commitment to creating something personal, welcoming, and unique to Lexington.
While the room itself has earned national recognition for its design, our focus has always been the experience inside it: bringing people together over memorable meals, thoughtful drinks, and genuine hospitality.
Mileta is the beginning of a larger vision. Together with Charis, our newest concept, and Relentless Hospitality, the hospitality group behind both restaurants, we continue to create spaces built around creativity, community, and a commitment to doing things differently.
